Have a medium bowl handy to mix fritter ingredients. Peel kolhrabi, than shred it. Shred carrots, add to bowl. Dice onion and onion greens, add to bowl & mix ingredients.
Push shredded veggies to the side of the bowl. Add almond, coconut flours, and spices, mix together.
Beat eggs using electric hand beater or like me I use my old fashioned egg beater.
Add beaten eggs to flours, spices and mix. Than mix egg mixture with veggie mixture.
I love using my cast iron pan to fry things, it adds the perfect crispiness that other pans can't seem to accomplish. Put couple TBSP of either butter or coconut oil or combination of both. Using a medium sized ice cream scoop helps make the perfect patty. Place heat on medium high and fry on both sides approximately 5 minutes.
This dish is delicious as a side dish for dinner and of course leftovers the next day. For an easier dinner throw a beef or pork roast into a crockpot, cook on low all day and enjoy!
