Cranberry-Ginger Apple Baked Oatmeal

Ingredients
  

  • 3 Cups Quick Oatmeal
  • 2 tsp Baking Soda
  • 1 tsp Salt
  • 1/2 Cup Maple Syrup
  • 2 Eggs Lightly Beaten
  • 1 Cup Coconut or Almond Milk
  • 1/2 Cup Coconut Oil melted If you don't have coconut oil, butter will work well
  • 2 Cups Apples sliced
  • 4 OZ Fresh Cranberries
  • 1 tsp Freshly Grated Ginger Root (see recipe notes) Best Substitution is 1/4 tsp ground ginger

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix oatmeal, salt & baking soda in a medium bowl. In a separate bowl mix the wet ingredients: maples syrup, eggs, milk & melted coconut oil. Mix wet and dry ingredients.
  • In a food processor mix grated ginger with the cranberries and very loosely chop the cranberries. Use the pulse button & pulse it no more than 5 times.
  • Mix apples & cranberry mixture with the oatmeal mixture. Use any nine inch baking pan to bake the oatmeal, if you want it to look more fancy use a nice pie pan. Spray pan with baking oil. Place mixture into any 9 inch baking pan & bake for 45 minutes. I like the top of the oatmeal to be a medium brown.
  • I like to eat my baked oatmeal with my homemade coconut or almond milk. If you want to make your own nondairy milk, I do have a blog post with ingredients needed & instructions.

Notes

  1. Most stores have ginger root & it's found with the fresh produce. In my area I've found it at Georgetown market, Whole Foods, Meijer and Kroger. Freshly grated ginger adds some amazing depth of flavor, but in a pinch used ground ginger.
