Instructions
Not a lot of instructions are needed for this recipe, so simple but delicious. I usually dice my jalapeno to make sure that all the pieces are pretty small. Throw the rest of the ingredients in a blender & pulse 3-5x. I like to have pretty big pieces of onion & fresh cilantro in my salsa so only pulse it 2-3 times.
If you have time to make the salsa ahead of time, refrigerate it for a couple hours to allow all the flavors soak in.
Salsa is delicious & healthy but eating a bunch of chips with it most likely isn't. I like to serve salsa with an omelette or make my own chips using a combination of sweet potatoes, white potatoes and Japanese potatoes. Thinly sliced beets also make good homemade chips.
