GARLIC ROASTED CARROTS WITH FRESH HERBS

Use to drizzle over carrots

Instructions
Pre-heat oven to 400 degrees.
I don't think it's necessary to peel the carrots before roasting them, usually I just scrap off some of the skin and any bad parts.
Drizzle carrots with plenty of olive oil. Sprinkle with spices.
Roast carrots for 30-45minutes, depending on the size of the carrots. Check carrots every 10 minutes for doneness.
Sprinkle with chopped fresh parsley, thyme & serve!
