Italian Style Marinade & Salad Dressing

Ingredients
  

  • 1/4 Cup olive oil
  • 1/4 Cup Water
  • 2 TBSP Apple cider vinegar
  • 1.5 tsp freshly squeezed lemon juice
  • 1 TBSP Coconut Sugar
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Rosemary
  • 1/2 tsp Dried Parsley
  • 1/2 tsp Dried Sage
  • 1 tsp Hemp Seeds
  • 2 OZ Sun Dried Tomatoes
  • 1 Oz Red Pepper
  • 2 Garlic cloves
  • 1/4 tsp Onion Powder or Granules
  • 1/8 tsp Salt & Black Pepper

Instructions
 

  • Not a lot of instructions necessary for this salad dressing recipe. Simply throw all ingredients into a vitamix and blend until desired consistency. I like to blend it until all ingredients are very fine but not completely puree.
  • Since this dressing already has a lot of flavor, I like to use it on a simple salad comprised of greens and small amount of red onions.
  • It is also delicious to use as a marinade for chicken breasts. Place chicken breasts in a tightly sealed container and cover with the marinade. Refrigerate overnight or for at least 8 hours before cooking the chicken. I baked the chicken at 350 degrees covered with the marinade in a small baking pan and served over cauliflower rice for a very delish and easy weeknight meal.
