Pre-Heat oven to 425, Place choppped veggies onto cookie sheet, drizzle with EVOO, salt & pepper. Stir the veggies every 15 minute & bake until slightly crispy on the outside & soft on the inside.
While veggies are roasting cook the onions and sausage. Saute onions in butter and coconut oil until onions are soft. Olive oil will also work well. Add thawed & crumbled sausage, cook until meat is no longer pink.Rinse apples well, peel if apples are not organic. Next add the chopped apples & cook for only a few minutes. Once veggies are roasted, add to meat mixture.

In another frying pan, make eggs over easy to serve with the hash. As you can see in my real life picture below my eggs don't always turn out picture perfect but still delicious.
