Preheat oven to 325 degrees.
In a medium bowl mix coconut sugar & eggs with a whisk or hand mixer. Than add applesauce, mix well. Last mix in the melted coconut oil.
In another mixing bowl, mix the rest of the dry ingredients accept raisins and pecans. Sift the the dry ingredients into wet ingredients. Sifting helps to mix the dry and wet ingredients more thoroughly. Fold in pecan pieces and raisins.
Using cooking spray to grease an 8x8 or 8x4 baking pan. Spread cake batter evenly into the pan. Bake for 50 minutes or until toothpick inserted in the middle comes out clean.
Allow cake to cool, than sift with powdered sugar onto the cake if desired.
