Preheat oven to 400 degrees.
To save a lot of time cut the veggies into small pieces and place into the food processor.
Pulse it a few times, I like to have my veggies diced into very small pieces.
Place the diced veggies in a medium size bowl and mix with the horseradish, cassava flour, tapioca starch, yellow mustard, salt, and black pepper.
Beat eggs and mix with the veggie mixture.
Lastly add beef and mix. Place meatloaf in an 8 inch greased bread pan or 3 miniature bread pans.
Bake meatloaf at 400 degrees for 40 minutes or until internal temperature is 165 degrees.
Evenly pour approximately 1 cup of your favorite barbecue sauce or ketchup onto the meatloaf and bake for another five minutes.
