Bottom Layer: Mix the tapioca starch, coconut sugar, cinnamon, and pinch salt in a medium size mixing bowl. Add the apples to the bowl & mix well.
Spread evenly in a 9 inch baking pan. I always use one of my glass pie pans because that's what I already have on hand.
Top Layer: Place ingredients accept the coconut oil in a food processor, pulse 3x. Melt coconut oil and drizzle into the flour mixture, pulse a few more times. Do not over mix, I like my topping to have some texture.
Spread flour mixture evenly onto apple layer. For this recipe I used an extra cup of apples because I like a lot of apples in my crisps. Bake at 350 degrees for 30 minutes or until apples are easily pierced with a fork.
