Gluten Free & Grain Free Apple Crisp

It’s the beginning of apple season, one of my favorite things about this time of the year. An apple and garden orchard from Rochester Indiana comes to my local farmer’s market starting in late July every year. They have a big variety of heirloom apples and mid apple season, apple cider is added to there list of products. It’s no surprise that I love all things apples especially apple crisps and apple pies.

Before I started eating gluten and grain free 95% of the time, I posted a recipe that is gluten free but has oats which is very delicious as long as one tolerates oats. Gluten Free & Grain Free Apple Crisp

Servings 1 Pie Pan

Ingredients
  

  • BOTTOM LAYER
  • 4 Cups Packed Apples Thickly Sliced
  • 2-3 TBSP Coconut Sugar
  • 2 TBSP Tapioca Starch
  • 1 tsp Cinnamon
  • Pinch Salt
  • TOP LAYER
  • 1/2 Cup Almond flour
  • 1/4 Cup Coconut flour
  • 1/4 tsp Baking soda
  • 1/4 tsp Salt
  • 2 TBSP Ground flax seeds
  • 1/2 Cup Almonds or Pecans My personal fav is pecans, it adds a nice nutty sweet flavor
  • 1/4 Cup Coconut Sugar
  • 1/2 Cup Coconut oil Melted

Instructions
 

  • Bottom Layer: Mix the tapioca starch, coconut sugar, cinnamon, and pinch salt in a medium size mixing bowl. Add the apples to the bowl & mix well.
  • Spread evenly in a 9 inch baking pan. I always use one of my glass pie pans because that's what I already have on hand.
  • Top Layer: Place ingredients accept the coconut oil in a food processor, pulse 3x. Melt coconut oil and drizzle into the flour mixture, pulse a few more times. Do not over mix, I like my topping to have some texture.
  • Spread flour mixture evenly onto apple layer. For this recipe I used an extra cup of apples because I like a lot of apples in my crisps. Bake at 350 degrees for 30 minutes or until apples are easily pierced with a fork.
