Drizzle soup pot with olive oil, saute onions till softened than add minced garlic, cook for another couple minutes. Add the rest of the ingredients: Broth, carrots, celery, navy beans, shredded ham, rosemary and thyme.
Simmer for approximately 30 minutes or until carrots and celery are soft. Add nut milk of choice. Lastly add salt and black pepper to taste.
This is an easy soup to make, but it is filled with lots of nutritious ingredients! The addition of the ham broth adds a whole new level nutrients that is very healing to your gut!
I had roasted my own ham cock for another dish, but I used the leftovers for this soup. If you don't want to roast your own ham hock, find the best quality that you can find at a grocery store or even better at a local meat shop that is already roasted.
Most people like salads or sandwiches with there soups. I like homemade applesauce and crackers with most of my soups!
