Creamy Ham & Navy Bean Soup

Creamy but dairy free, one pot ham & bean soup.

When I was young my mom used to roast a ham in our wood stove every Christmas. I still remember how delicious it was and the aromas that filled the whole house as it was roasting. I have been wanting to roast a ham hock for a long time, so a couple weeks ago I decided to buy a ham hock from a local farm.

This ham hock was approximately four pounds & provided enough meat for several meals for the two of us. I used it for a large breakfast casserole, dinner salads and now this recipe: Creamy Ham & Navy Bean Soup. Onto the soup, after all the other meals I made with this ham I still had approximately 2 cups of meat left over. It’s still cold here in central Indiana and I thought a warm, cozy, creamy soup sounded delicious. Navy beans always go well with ham along with some carrots and celery. Initially I had also thought of adding some chopped roasted potatoes, but decided not to since the combination of beans and carrots add plenty of healthy carbohydrates. For the broth I used a combination of the juices leftover from roasting the ham and the additional broth I made using ham bones and the fat from the meat. If you do not have any ham broth, chicken broth is also suitable. This recipe made about two quarts and provided 3 meals each for my husband and I.

Creamy Ham & White Bean Soup

Servings 4 Large Servings

Ingredients
  

  • 1 Large Yellow or sweet onion Diced
  • 4 Garlic cloves Minced
  • 2 Large carrots Chopped
  • 2 Large Celery Stalks Chopped
  • 5 Cups Ham Broth Chicken broth will also work, but the finished product will taste slightly different
  • 1 Cup White Beans Cooked
  • 1 tsp Dried Rosemary
  • 1 tsp Dried Thyme
  • Leftover Ham from a Ham Cock I used approximately 2 Cups.

Instructions
 

  • Drizzle soup pot with olive oil, saute onions till softened than add minced garlic, cook for another couple minutes. Add the rest of the ingredients: Broth, carrots, celery, navy beans, shredded ham, rosemary and thyme.
  • Simmer for approximately 30 minutes or until carrots and celery are soft. Add nut milk of choice. Lastly add salt and black pepper to taste.
  • This is an easy soup to make, but it is filled with lots of nutritious ingredients! The addition of the ham broth adds a whole new level nutrients that is very healing to your gut!
  • I had roasted my own ham cock for another dish, but I used the leftovers for this soup. If you don't want to roast your own ham hock, find the best quality that you can find at a grocery store or even better at a local meat shop that is already roasted.
  • Most people like salads or sandwiches with there soups. I like homemade applesauce and crackers with most of my soups!
