Instructions
Preheat oven to 350
Cut broccoli & cauliflower into medium sized florets. Thinly slice red onion and garlic cloves. Spread vegetables evenly onto a cookie sheet.
Drizzle with olive oil or avocado oil. Sprinkle with all spices. Use smaller amount of red pepper for less spiciness or omit altogether.
Roast for 45 minutes. I like my roasted veggies to have a slight crunch, but if you don't just roast it for a few more minutes.
My husband and I both love spicy dishes, adding the cilantro, drizzled with juice of a small lime ties all the flavors together.
For a complete & filling vegetarian meal, I added some roasted butternut squash served alongside my homemade ranch dressing.
For children or picky eaters simply omit the red pepper & cilantro. Children almost always like to dip there veggies and ranch dressing goes great with this side dish.
