Roasted Broccoli & Cauliflower With Curry Spices

Tasty, Spicy Side Dish

Most of the time when I roast broccoli and cauliflower I just drizzle it in olive oil, salt and black pepper which is easy and still delicious. This time I wanted to go with a more bold flavor profile. In the past I have used curry powder with mostly roasted veggies, but I know that it goes well with most vegetables. I wanted some other flavors besides just the curry so I added some onions and garlic. If you like spicy flavors, add some red pepper powder. The addition of lime juice and cilantro leaves helps to round out the spiciness of the spicy red pepper.

This is definitely a dish that I will make in the near future. Serve it alongside some roasted butternut squash or sweet potatoes and you have a filling, healthy, delicious light lunch or dinner. As always thanks for stopping by, CHEERS TO A HAPPY & HEALTHY DAY!

Roasted Broccoli & Cauliflower With Curry Spices

Ingredients
  

  • 1 Head of Caulflower
  • 1 Head of Broccoli
  • 1 Small Red Onion Thinly Sliced
  • 3 Large Garlic cloves Thinly Sliced
  • 1 TBSP Curry Powder
  • 1/2 tsp Red Pepper Powder
  • 1/2 Salt Amount is approximate, I just sprinkled salt evenly over veggies
  • 1 Small Handful Cilantro Leaves Optional
  • 1 Juice of A Small Lime Optional

Instructions
 

  • Preheat oven to 350
  • Cut broccoli & cauliflower into medium sized florets. Thinly slice red onion and garlic cloves. Spread vegetables evenly onto a cookie sheet.
  • Drizzle with olive oil or avocado oil. Sprinkle with all spices. Use smaller amount of red pepper for less spiciness or omit altogether.
  • Roast for 45 minutes. I like my roasted veggies to have a slight crunch, but if you don't just roast it for a few more minutes.
  • My husband and I both love spicy dishes, adding the cilantro, drizzled with juice of a small lime ties all the flavors together.
  • For a complete & filling vegetarian meal, I added some roasted butternut squash served alongside my homemade ranch dressing.
  • For children or picky eaters simply omit the red pepper & cilantro. Children almost always like to dip there veggies and ranch dressing goes great with this side dish.
