Pre-heat oven to 375 degrees and roast spaghetti squash while making the sauce. See my blog on how to roast a spaghetti squash if needed.
Drizzle oil into frying pan, saute diced onions, red pepper until softened than add minced garlic and sliced mushrooms. Cook for an additional two minutes. Add unthawed sausage, use spatula to cut meat into small pieces as its' cooking.
Once the meat is cooked, add tomato sauce, spices and dried or fresh herbs. Simmer for 30 minutes with the lid on, this helps to disperse the flavors throughout the sauce.
Once both the squash and sauce are cooked simply drizzle the sauce over the spaghetti. Serve with a simple side salad and you will have a complete but delicious meal. ENJOY!
