SPAGHETTI MEAT SAUCE SERVED OVER SPAGHETTI SQUASH

 

As I’m writing this blog it is cloudy, rainy and dreary outside. I’m also listening to Frank Sinatra which has nothing to do with food blogging but he happens to one of my favorite fall time musicians. Anyways, back to business. This is perfect weather for a weeknight comfort meal, but unlike most comfort food this dish does not make you feel stuffed, bloated and sleepy instead it nourishes your body with the nutrients that you need. The trick is to use a baked spaghetti squash or spiralized zucchini instead of traditional pasta.

I used to buy a spaghetti sauce at Trader Joe’s that had diced onions, sweet peppers, mushrooms, garlic and dried herbs in it. I have been wanting to make my own version but add meat to make it a more filling weeknight dish. In the last couple months I finally made a sauce a few times, with slight alterations.  I have found that my favorite meat to use with it is italian sausage that I buy at a local farmer’s market, Fork to Farm Farmer’s market at Normandy Farms.

SPAGHETTI MEAT SAUCE SERVED WITH SPAGHETTI SQUASH

Ingredients
  

  • 1 Spaghetti Squash
  • 2 TBSP Olive oil or Avocado oil
  • 1 Small Yellow Onion diced
  • 1 Sweet Red Pepper Chopped
  • 3 Cloves of Garlic Minced
  • 1/2 Pound Italian Sausage
  • 8 OZ Mushrooms Sliced
  • 1 TBSP Basil dried If you are using fresh herbs, add at least 2 TBSP each of basil and oregano
  • 1 TBSP Oregano dried
  • Salt & Black Pepper to taste

Instructions
 

  • Pre-heat oven to 375 degrees and roast spaghetti squash while making the sauce. See my blog on how to roast a spaghetti squash if needed.
  • Drizzle oil into frying pan, saute diced onions, red pepper until softened than add minced garlic and sliced mushrooms. Cook for an additional two minutes. Add unthawed sausage, use spatula to cut meat into small pieces as its' cooking.
  • Once the meat is cooked, add tomato sauce, spices and dried or fresh herbs. Simmer for 30 minutes with the lid on, this helps to disperse the flavors throughout the sauce.
  • Once both the squash and sauce are cooked simply drizzle the sauce over the spaghetti. Serve with a simple side salad and you will have a complete but delicious meal. ENJOY!
