Turkey and Beef "Cupcakes"

Ingredients
  

  • 2 Eggs beaten
  • 1/4 Cup Milk Or any dairy milk alternative
  • 2 Cups Bread crumbs To make it gluten free, use GF crackers or bread
  • 2 Red Peppers Chopped
  • 1 Cup Sweet Onion Finely chopped
  • 1 TBSP fresh horseradish or 2 TBSP Prepared Horseradish
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 1 TBSP Yellow mustard
  • 1 lbs Ground Turkey or any combination of ground turkey & beef
  • 1 lbs Ground Beef
  • 1/4 Cup Ketchup
  • 4 medium potatoes Any white potato will work well for the mashed potatoes

Instructions
 

  • 1. Preheat oven to 350 degrees
  • 2. Use a medium size bowl to mix the first 9 ingredients.
  • 3. Mix the bread crumbs, spices together with the beaten eggs & milk before mixing it with the meat. I like to use a big fork as shown in the picture to mix everything together but it works just as well to use your hands.
  • 4. Spray Cupcake pan with EVOO. Fill evenly with the meat mixture. Bake for 30 minutes, spread with ketchup. Bake an additional 10minutes or until center is no longer pink.
  • 5. While Cupcakes are baking, Peel potatoes if using russett (Many times if I use red or Idaho potatoes, I just rinse well since the skins are pretty thin). Cut into medium pieces, cover with water & boil. Potatoes are ready once they fall apart if pierced with a fork.
  • 6. Once potatoes are soft, drain but reserve fluids. Mash the potatoes, add enough reserved liquid & 2 TBSP butter to make potatoes creamy. Add 1 tsp salt or more to taste.
  • 7. Top Cupcakes with mashed potatoes, drizzle with hot sauce if desired. Serve immediately.
