1. Preheat oven to 350 degrees
2. Use a medium size bowl to mix the first 9 ingredients.
3. Mix the bread crumbs, spices together with the beaten eggs & milk before mixing it with the meat. I like to use a big fork as shown in the picture to mix everything together but it works just as well to use your hands.
4. Spray Cupcake pan with EVOO. Fill evenly with the meat mixture. Bake for 30 minutes, spread with ketchup. Bake an additional 10minutes or until center is no longer pink.
5. While Cupcakes are baking, Peel potatoes if using russett (Many times if I use red or Idaho potatoes, I just rinse well since the skins are pretty thin). Cut into medium pieces, cover with water & boil. Potatoes are ready once they fall apart if pierced with a fork.
6. Once potatoes are soft, drain but reserve fluids. Mash the potatoes, add enough reserved liquid & 2 TBSP butter to make potatoes creamy. Add 1 tsp salt or more to taste.
7. Top Cupcakes with mashed potatoes, drizzle with hot sauce if desired. Serve immediately.
