Baked Oatmeal With Figs & Pecans


Lately I’ve been craving cereal, but I have not eaten traditional store bought cereal in several years. So on this Funday Sunday morning I made the best alternative to conventional cereal, baked oatmeal. My mom has made baked oatmeal for the last few years and it has been a hit with our whole family. I drew inspiration from her recipe & several other recipes that I saw on pinterest that I thought looked pretty delicious.

Baked Fig Pecan Oatmeal
Ingredients
- 3 Cups Quick Oatmeal
- 1/2 Cup Pecans
- 2 tsp Baking soda
- 1 tsp Salt
- 1/2 Cup Figs
- 1/2 Cup Pure Maple Syrup
- 1/2 Cup Butter or Coconut oil melted
- 2 eggs beaten lightly
- 1 Cup coconut milk Or any milk of your choice
Instructions
- Preheat oven to 350 degrees.
- Mix dry and wet ingredients separately than mix together.
- Place oatmeal in baking dishes. To bake the oatmeal I used two 6-inch diameter ramekin bowls. A nonstick baking dish with a nine inch diameter will also work well. Be sure to spray with cooking oil before baking.
- Bake for 20-30 minutes or until the top is browned, as seen in the picture.
- I like to eat my oatmeal with coconut milk. It would also be delicious with fresh berries & yogurt. ENJOY this delicious & nutritious take on baked oatmeal!
