Baked Sweet Potatoes With All The GOODS!

What’s your favorite way to prepare sweet potatoes? Or are you like me and like to use it in a wide variety of ways from roasting, baking, adding it to soups, stews and taco bowls. I love roasting a big pan of sweet potato fries and using leftovers with added leafy greens and eggs for breakfast the next morning. 

I usually only eat red meat or chicken a couple times a week, but my husband likes to have meat with most of his dinners. Therefore I have been coming up with meals that meat is optional. For example, when I make tacos I make plenty of veggies with both black beans and taco meat for the protein. Which leads me to sweet potatoes since it’s a dinner stable for both my husband and I. One of my favorite combinations is sweet potatoes and black beans, which leads me to my newest foodie obsession, baked sweet potatoes with all the GOODS! The chili and garlic spices in the black beans blends beautifully with the flavors of the sweet potato. Top it off with some spicy guac sauce, shredded cheese, cilantro  & you have a complete dinner. Since chorizo has some of the same flavor profiles as the spiced filled black beans, it also goes very well with the baked sweet sweet potatoes. 

This dish would be a wonderful idea for a small to medium dinner party. The majority of the food such as the beans, guac sauce, shredded cheese, tomatillo salsa (click for recipe) could be made the morning of the party that way you have much more time to enjoy the time with your friends and family. Both the black beans and ground chorizo can easily be reheated. Prepare the sweet potatoes for baking and allow at least one hour to bake. If the sweet potatoes are ready early, leave them wrapped in the aluminum foil and they will remain hot for at least 30 minutes. 

This was a weeknight dinner for us and turned out to be one of our most favorite meals. We actually had leftovers that we ate with scrambled eggs the next morning for breakfast! I hope you enjoy this dish as much as we did. THANKS again for visiting! CHEERS TO A HAPPY & HEALTHY DAY! 

Black Bean Chorizo Stuffed Sweet Potatoes

Ingredients
  

  • 4 Medium to Large Sweet Potatoes
  • 1 lb Ground Chorizo
  • INGREDIENTS FOR THE SPICY GUAC SAUCE
  • 1 Avocado
  • 1 TBSP Mayonnaise
  • 1/2 Jalepeno Deseeded Use whole Jalepeno for really spicy sauce
  • Juice of 1/2 Lime
  • 1 TBSP Fresh Cilantro Leaves
  • BLACK BEAN INGREDIENTS
  • 2 Garlic cloves Minced
  • 1 TBSP Onions Diced
  • 2 Cups Black Beans Cooked
  • 1 Small Red Onion Diced
  • 1/4 tsp Chili Powder
  • 1/4 tsp Smoked Spanish Paprika
  • 1/4 tsp Cumin Powder
  • 1/4 tsp garlic powder
  • 1/2 tsp Sea Salt
  • Fresh Cilantro, Shredded Cheese and Salsa For additional toppings

Instructions
 

  • Preheat oven to 425 degrees.
  • Rinse sweet potatoes & cut off all the bad parts. Wrap in aluminum foil and bake till potatoes are completely soft. Usually takes about 45-60 minutes, depending on the size of the potato.
  • While potatoes are baking, make the guac sauce & black beans.
  • For the Black Beans: Chop small red onion, saute in olive oil or avocado oil until soft. Rinse black beans, add to onions. Add all spices to black beans, and cook for approximately 5 minutes. If needed add a small amount of water to keep beans and onions from burning onto the pan.
  • For the spicy guac sauce: Place all ingredients in a high speed blender. Blend until all ingredients are completely blended or allow sauce to have small pieces in it.
  • Ground Chorizo goes very well with sweet potatoes, I know that my husband especially loved it!
  • Last but not least, cut your potato down the middle & stuff with all your favorite toppings!
