Cucumber Mint Salad
FRESH SUMMER SALAD
This salad is so good that it deserves its’ own blogpost even though it is very simple and easy to prepare. Using a fresh cucumber from the local farmer’s market combined with fresh mint from my garden created the perfect pairing. I started making this salad soon after I met my husband and over the years I’ve changed it to perfection. Right now it’s to early to find in season cucumbers, but in the winter I get fresh organic cucumbers at Trader Joe’s.
This salad is best served with my turkey hummus burgers that I also started making at the same time and you will find it in a separate blogpost coming soon. It’s also delicious with any of your favorite burgers. I always have leftovers because it’s still just my husband and I for most meals therefore I often eat it with other healthy fats for my first meal of the day whether it’s breakfast or lunch.

Cucumber Mint Salad
Ingredients
- 1 English Cucumber Chopped
- 4 OZ Feta Cheese Crumbled
- 1 Handful Fresh Mint leaves I just rip them into small pieces or you can chop it
- 2 TBSP Red Wine Vinegar
- 2 TBSP Balsamic Vinegar
- Salt & Black Pepper To Taste
Instructions
- You will need a medium sized bowl to mix this salad. Slice cucumber into 1 inch pieces than cut into four quarter pieces as shown in the picture.
- Add to bowl along with the rest of the ingredients. Mix and let set in the refrigerator for a couple hours to allow time for the flavors to set.
