KOHLRABI AND CARROT FRITTERS
What is kohlrabi? Has anyone even heard of it? And how do you cook it? I have always loved trying new foods and since these are a spring vegetable I have been experimenting with them. A raw kohlrabi is crispy on the inside similar to an apple, slightly sweet but also has a mild taste to it similar to cabbage. Last week I made a batch of kohlrabi carrot fritters. After frying them, they were still slightly crispy on the inside but not to crispy, kind of like the al dente of pasta. I also added a small white onion from the farmer’s market that still had the greens attached, don’t throw it away. As you can see on the above picture the greens are still bright green, healthy and beautiful. I chopped up parts of the onion greens and added it to the fritters, this adds additional flavor and nutrition. I still had some leftover greens so I used it along with some other veggie scraps and made a pot of veggie broth. If you don’t have any onion greens, use garlic or onion chives.
I usually have fritters and patties as a side dish or part of a main dish. Fritters make a great meal by layering it with a sausage patty, egg and cheese and/or basil pesto. So whip up some fritters for a delicious weeknight meal. CHEERS TO A HAPPY & HEALTHY DAY!
KOHLRABI AND CARROT FRITTERS
Ingredients
- 1 Kohlrabi Peeled and Shredded
- 1 Cups carrots Shredded
- 1 Medium White onion and onion greens Diced or add a couple TBSP of chopped chives with the onion
- 2 TBSP Almond flour
- 1 TBSP Coconut flour
- 1/2 tsp Salt & Black Pepper
- 1 tsp garlic powder
- 2 Eggs Beaten
Instructions
- Have a medium bowl handy to mix fritter ingredients. Peel kolhrabi, than shred it. Shred carrots, add to bowl. Dice onion and onion greens, add to bowl & mix ingredients.
- Push shredded veggies to the side of the bowl. Add almond, coconut flours, and spices, mix together.
- Beat eggs using electric hand beater or like me I use my old fashioned egg beater.
- Add beaten eggs to flours, spices and mix. Than mix egg mixture with veggie mixture.
- I love using my cast iron pan to fry things, it adds the perfect crispiness that other pans can't seem to accomplish. Put couple TBSP of either butter or coconut oil or combination of both. Using a medium sized ice cream scoop helps make the perfect patty. Place heat on medium high and fry on both sides approximately 5 minutes.
- This dish is delicious as a side dish for dinner and of course leftovers the next day. For an easier dinner throw a beef or pork roast into a crockpot, cook on low all day and enjoy!
