CABBAGE CILANTRO SALAD
Cabbage is one of my favorite toppings for tacos, including my recipes for the blackened salmon tacos and simply delicious pork carnitas. I like to make this simple cabbage salad, but at the same time it’s filled with flavor, crunch, a little kick from the jalapeños and the acid from the lime juice completes the flavor profile. Purple cabbage is my favorite choice but a combination of purple and green cabbage is fine to. Using half a cabbage will make a rather large salad, serves approximately 8 people, use only a quarter of a cabbage for small crowds. CHEERS TO A HAPPY & HEALTHY DAY!
CABBAGE CILANTRO SALAD
Ingredients
- 1/2 Purple Cabbage Sliced thinly
- 1 Small Yellow or sweet onion Chopped
- 1/2 Cup Cilantro Leaves
- 1 Small Lime Freshly squeezed juice
- Salt & Pepper to taste
- 1 Jalapeno Deseeded and diced, omit if you don't like spiciness!
Instructions
- Cut cabbage in half & slice thinly, place in medium size salad bowl. Chop onion and add to cabbage.
- Rinse cilantro if needed. A salad spinner is very handy to use to dry lettuce as well as fresh herbs. Add cilantro to cabbage. Sprinkle with juice of one small lime. Salt & pepper to taste
- If you like a bit of spice, add a deseeded and diced jalapeño. A bit of advice, wear disposable gloves while handling any hot pepper to prevent any skin or mucosa burns.
