ZUCCHINI PATTIES

Zucchinis are in abundance during

the late summer and fall.  Due to it’s light flavor it can be used for zucchini bread, patties, spiraled noodles or casseroles.  Some of my favorite dinners is using traditional breakfast foods for dinner & zucchini is one of those vegetables that can be used for both. A few weeks ago I made zucchini patties and layered it with a sausage patty with an over easy egg. This was a delicious breakfast but could also be used as a side dish for a weeknight dinner. In today’s post I will share the recipe and  also give a couple ideas on how to use as part of the main dish at the end of this blog.

 

 

RECIPE

Ingredients
  

  • 2 Cups Zucchini shredded
  • 1 Cup Onions, diced sweet or yellow onion
  • 1/2 Cup plus 1 TBSP flour
  • 1 tsp each of black pepper & salt
  • 2 Eggs Beaten
  • 2 TBSP or more Coconut or Olive Oil to fry patties

Instructions
 

  • Stir all ingredients together. Put oil in pan & set heat to medium. I used a medium size ice cream scoop & filled it with zucchini mixture and put it in the frying pan and flatten it slightly.
  • Fry the patties for approximately 5minutes on each side or until browned.
