TURMERIC COCONUT SAUCE

Thai Inspired Turmeric Sauce made with Coconut Milk

A year ago we went to Scottsdale, Arizona for holistic treatments for myself and at the end of the trip we went to Sedona Arizona for a few days. While in Sedona we went to a Thai restaurant that had an amazing menu, everything was made from scratch including their sauces and condiments. The sauces all had a base of coconut milk with various other herbs and spices added. It was definitely one of our favorite places that we ate at, the food was simple but incredibly flavorful. For example, I ordered a dinner bowl which automatically came with rice with a choice of protein, vegetable and sauce. The sauce I choose was coconut milk with turmeric, onions and cumin. Another sauce that my husband really liked was made from coconut milk and a green curry paste. I’m hoping to recreate this recipe sometime this summer once I have fresh green herbs and jalapeno peppers from my garden.

Recently my mom came to Kentucky and will stay here for a couple months. My health has been getting better and I’ve been looking forward to cooking delicious meals for her. She has always loved anything coconut flavored and I had planned to recreate the coconut turmeric sauce for her during her stay. I still remember the exact flavor of this sauce and I was so happy that I was able to recreate it during my mom’s visit. While going through all my health struggles I’m learning to find joy in the small things, being able to cook and create recipes has definitely brought back a lot of joy to my daily life.

Turmeric Sauce

Thai Inspired sauce made with coconut milk

Ingredients
  

  • 1 Small Onion Chopped
  • 2 TBSP Coconut Oil
  • 4 tsp Fresh Turmeric
  • 3/4 tsp Ground Cumin
  • 1/2 Cup Coconut Milk
  • 1/4 Cup Coconut Cream If you don't have coconut cream add additional coconut milk
  • Salt To taste

Instructions
 

  • In a medium pan melt coconut oil, add chopped onions and cook till soft.
  • Add all of the ingredients to a high speed blender and blend till completely smooth.
  • Taste and add more salt if needed.
  • This is a Thai inspired sauce pairs best with simple foods like rice, chicken, steak, and fish. My favorite vegetables to serve with this sauce are: steamed asparagus, green beans, broccoli, caramelized onions, carrots, and bok choy. These are just a few veggie ideas, one can steam or roast any of your favorite vegetables and serve alongside this sauce. Another tip is to use simple spices on your meats and veggies since the sauces are already very flavorful.
