SPINACH STRAWBERRY PECAN SALAD
A couple years ago I discovered how delicious salads are with added fresh fruit such as strawberries and blueberries. I usually make this salad in the spring and early summer when strawberries are readily available from the local farmer’s market. The flavors of the fresh strawberries and red onions goes well with the balsamic dressing. and the pecans add a touch of crunchiness and sweetness. This salad goes well with an olive oil, balsamic based dressing, it’s simple and easy to make. Of course you can always use good old ranch dressing which goes well with a variety of salads. This is an easy, simple salad for your weeknight dinners. CHEERS TO A HAPPY & HEALTHY DAY!
SPINACH STRAWBERRY PECAN SALAD
Ingredients
- FOR THE SALAD
- 8 OZ Spinach
- 1 Cup Fresh Strawberries Sliced
- 1/2 Cup Pecans
- Small Red Onion Sliced
- FOR THE DRESSING
- 1/4 Cup olive oil
- 1 TBSP Balsamic Vinegar
- 1 tsp Sugar or Honey
- Salt & Pepper to taste
Instructions
- Mix all salad ingredients. May store in airtight container in refrigerator, stays fresh for only a couple days.
- Mix all salad dressing ingredients together. Mix with salad dressing & serve immediately. Otherwise store salad in refrigerator until ready to serve.
- I usually store my salad dressings in a small glass jar or gravy saucer as seen in the pictures below. Most of the time I don't mix my dressing with the whole salad because leftovers leafy greens will stay fresh longer without the dressing. I usually have each person add the dressing to there individual salad. You also have to shake or stir the dressing right before adding to salad because the oil & vinegar will separate while it's sitting still.
