BLACK BEAN PASTA WITH FRESH HERBS

Personally I don’t eat pasta very often, but when I do the pasta itself has to be made from high quality ingredients. I always buy organic wheat products or occasionally I make my own pasta from spelt flour. A few months ago I found some black bean pasta at trader joe’s and the ingredient list was very short: black bean flour and water.  This is a great alternative for people that do not tolerate wheat or gluten. When cooking this pasta keep in mind that it becomes very starchy if it’s cooked for to long. Once the pasta is cooked, rinse in cold water. This step really helps to prevent the pasta from becoming to starchy and from sticking to each other. 

Adding fresh herbs to this dish made it all the more flavorful and fun to eat.

BLACK BEAN PASTA WITH FRESH HERBS

Ingredients
  

  • 12 oz Black Bean Pasta
  • 2 TBSP olive oil
  • 1 Medium sweet or yellow onion Chopped
  • 4 Large Garlic Minced
  • 2 Cups Frozen Green Peas
  • 3 Bigs Springs Of Fresh Oregano
  • 3 TBSP Fresh Basil Leaves
  • 1 Cup Green or Rainbow Chard Chopped
  • 1.5 Cups Vegetable Broth
  • 2 TBSP Butter or Ghee For flavoring
  • Salt & Black Pepper To taste

Instructions
 

  • Drizzle olive oil into pan, add chopped onions, sauté till onions are softened. Add minced garlic and sauté for one minute, set aside.
  • Bring water to boil in a medium saucepan, add pasta. Boil until pasta is al-dente. Watch closely because if bean pasta cooks to much, it will be very starchy and to creamy. Rinse pasta in cold water, this stops the cooking and prevents the pasta from sticking together.
  • Place pasta back in saucepan, add all other ingredients: onion mixture, 1.5 cups broth, green peas, basil, oregano, & chopped chard. Simmer until green peas are cooked and chard is wilted, this shouldn't take longer than 5 minutes. Also add more broth if needed
  • I like to add a couple tablespoons butter, it adds a creamy delicious flavor. Last but not least add salt and pepper to taste.
  • This pasta dish has a lot of flavors, so you can serve it with a simple protein such as grilled chicken or cooked shrimp . As you can see in the picture, I choose to serve it with large shelled shrimp sprinkled with some simple spices.
