GARLIC ROASTED CARROTS WITH FRESH HERBS
These past few weeks have been a little crazy therefore putting my blogging and recipe creativity on the back burner. The good news is this week I’m BACK & already came up with THREE new recipes that I want to share with you my readers this week.
The first recipe of the week is Garlic roasted whole carrots served with FRESH HERBS! This is an easy side dish for weeknight dinners or dress it up for a fancy SUNDAY SUPPER served alongside a beef roast.
This dish is simple with only a few ingredients but surprisingly it’s one of my new favorite ways to enjoy whole carrots. I give approximate measurements for the spices used, but you can always use less or more per your profile tastes. I only used the simple spices, salt, black pepper, garlic and onion powder which I BELIEVE most children & adults usually enjoy. GARLIC ROASTED CARROTS WITH FRESH HERBS
Ingredients
- 2 LBS carrots
- 1 tsp garlic powder
- 1 tsp Onion Powder
- olive oil Use to drizzle over carrots
- 2 TBSP Parsley Chopped
- Couple Springs Fresh Thyme
Instructions
- Pre-heat oven to 400 degrees.
- I don't think it's necessary to peel the carrots before roasting them, usually I just scrap off some of the skin and any bad parts.
- Drizzle carrots with plenty of olive oil. Sprinkle with spices.
- Roast carrots for 30-45minutes, depending on the size of the carrots. Check carrots every 10 minutes for doneness.
- Sprinkle with chopped fresh parsley, thyme & serve!
