ZUCCHINI CHOCOLATE CHIP BREAD

In the last couple of weeks there has been plenty of zucchini every local farmer’s market so this past week I’ve been making both savory and sweet recipes. Growing up my mom always made zucchini bread during the summer and this recipe was inspired by this particular recipe.

At a local coffee shop they have chocolate chip zucchini bread butI  know that it’s filled with a lot of sugar and the unhealthy chocolates which is another reason why I decided to come up with a healthier version. My mom always puts in half the amount of sweetener or less that most recipes call for and I have found that her baked goods taste even better without all the extra sugars.

Very rarely do I use white sugar, most of the time I use coconut palm sugar, maple syrup or honey all of which have a much lower glycemic index level than white sugar. I also like to use things like dates, figs, cacao chips and raisins to add sweetness to desserts because these things also add some nutrition verses just sweetness.  As always my posts are short & sweet! ZUCCHINI CHOCOLATE CHIP BREAD

Cook Time 40 minutes
Total Time 50 minutes
Servings 2 Loaves

Ingredients
  

  • 2 Cups Spelt Flour
  • 3/4 Cup Coconut Sugar
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1/2 tsp Cinnamon
  • 1 Cup Rolled Oats
  • 3 Eggs Beaten
  • 1 tsp Vanilla
  • 1/2 Cup Very Ripe Bananas Smashed & Pureed
  • 2 Cups Zucchini Grated

Instructions
 

  • Pre-heat oven to 350 degrees.
  • Mix all the dry ingredients in a medium sized bowl. Lightly beat eggs, add vanilla and bananas to eggs & mix well. Mix dry and wet ingredients together.
  • Since you are only grating 2 cups of zucchini, it's more time effective to use a hand grater to grate the zucchini. Add zucchini to the batter last.
  • I added 1/4 Cup chocolate chips that were 100% cacao to one of the bread loaves & I really liked it. I simply added it to the batter and swirled it into the batter using a spoon. Try to find chocolate chips that are at least 70-80% cacao to receive the health benefits & cacao chocolate usually has a lot less added sugar.
  • Spray pans with olive oil. I used two 8x5 bread pans to bake the zucchini bread. Bake at 350 for 40 minutes or until toothpick inserted in the middle of the bread comes out clean.
  • Both of the Zucchini Bread loaves were delicious especially the piece that I slathered in butter while it was still warm!
