My Favorite Fall Dessert, Apple Crisp

The fall season brings with it some of my favorite things: crisp cool air, pumpkin pie spice and all dishes that involve apples. In my tradition we only used apples for pies, crisps, half moon pies, cobblers and applesauce, but in a previous blog I used apples for a delicious but savory meal sausage and roasted butternut squash, sweet potato hash.  Although today’s recipe is a family favorite fall dessert, APPLE CRISP made with apples from a local orchard, Country Orchard & Gardens.

What type of apple is best to use for baking? I prefer using an apple variety that is sweet but still slightly tart that way I only have to use minimal coconut sugar to sweeten this dessert. I use coconut sugar over other varieties because it’s flavor profile is similar to brown sugar but with a lower glycemic index. Apple Crisp

Ingredients
  

  • BOTTOM LAYER
  • 4 Cups Packed Apples Sliced
  • 2 TBSP Coconut Sugar
  • 2 TBSP Spelt Flour All-Purpose flour is a suitable substitute
  • 1 tsp Cinnamon
  • Pinch Salt
  • TOP LAYER
  • 1/2 Cup Rolled Oats
  • 1/2 Cup Spelt Flour Again All-purpose flour is a suitable substitute
  • 3 TBSP Coconut Sugar
  • 1/4 Cup Butter or Coconut oil Softened

Instructions
 

  • Pre-heat oven at 375 degrees.
  • Rinse, peel and slice apples. I buy my apples from a local apple orchard that doesn't spray the trees otherwise I would peel the apples. Mix coconut sugar, flour & cinnamon. Mix with sliced apples & place into a baking pan. I used a traditional 8 inch pie pan, but any other baking dish that's a similar size will work well.
  • Mix all top layer ingredients accept add the softened butter. Mix the butter or coconut oil with the dry ingredients by rubbing both between your hands until its well combined, but mixture will still have small lumps.
  • Evenly distribute flour/oatmeal layer on top of the apple layer.
  • Bake apple crisp until apples are softened and top is browned but not burned. I check the doneness of the apples by piercing it with a fork.
  • Serve alone or add some whipped cream or whipped coconut sweetened with honey.
