GLUTEN & GRAIN FREE BAKED CABBAGE

Growing up my mom always made baked cabbage and as an adult it has become one of my favorite dishes to make in the late spring & again in the fall. It’s a simple dish, but it highlights the flavor of cabbage by using very simple ingredients that do not overwhelm its’ natural flavors. Many times we would eat it alongside mashed potatoes and meatballs or meatloaf and to this day it is still one of my favorite comfort meals. Most of the time I just make it with some roasted root veggies such as red or sweet potatoes and a simple side salad. 

Raw green cabbage has a peppery flavor and a crisp crunchy texture, but once it’s baked the flavor changes to a light sweetness. If you bake or cook it to long it gets really soft and slimy. After baking it for 45 minutes I usually check for doneness. I like my baked cabbage to pierce easily with a fork and slightly crunchy on top.

Ingredients
  

  • 1/2 Green Cabbage Chopped or shredded
  • 1 Small onion Chopped or shredded
  • 1/2 Cup Almond flour
  • 2 TBSP Coconut flour
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 1/2 Cup Almond Milk, Plain
  • 2 Eggs Beaten

Instructions
 

  • Preheat oven to 375 degrees.
  • This time I chopped both the cabbage and onions, than mixed it with the rest of the ingredients in a medium sized bowl. In the past I've also shredded both the cabbage and onions in a food process which of course saves you some time.
  • Mix both flours, salt & black pepper in a separate small bowl.
  • Add dry ingredients in a separate corner of the bowl with the cabbage onion mix, see picture below.
  • Add 1/2 cup almond milk to the flours and mix well. Next add beaten eggs to the flour/milk mixture and mix well.
  • I like to mix all the ingredients together using a large fork, it helps mix everything evenly.
  • I like to use an oversized pie pan for most of my savory baking dishes. Any nine inch baking dish will work just as well. Spray pan with olive or avocado oil. Evenly pack cabbage mixture into pan. Place into oven & bake for 45-60 minutes. Use a fork to pierce the cabbage to make sure that it's soft, but not mushy.
  • I like my cabbage to be browned on the top and sides, it adds an extra crunch and good flavor.
