CROCKPOT CREOLE CHICKEN & SAUSAGE

This crockpot is incredibly flavorful and easy to make. You don’t have to do any prep work, just loosely chop all the veggies, slice chicken breasts if needed and cut sausage into small pieces. Throw it all in the crockpot in no particular order, set the temperature on low or high and you will have a delicious weeknight meal when you come home from a long day at work.

Are you doing a whole30 or if you know that you do not tolerate beans than simply omit the black beans. I love the flavor and texture of most beans therefore I put them in a lot of my savory dishes, but I also know that not everyone tolerates them and omitting them in this dish does not change the flavors. In the past year, I started serving meals like this over cauliflower rice vs traditional rice for a couple reasons. It dramatically cuts down on the carb consumption and adds another healthy vegetable to my meal. As always thanks for the visit, let me know if you have any questions. Ingredients
  

  • LB Boneless, Skinless Chicken Tenders
  • 1 LB Spicy Sausage
  • 1.5 Cups Chicken broth
  • 14.5 OZ Diced Tomatoes
  • 1/2 Cup Tomato Sauce
  • 3 TBSP Tomato Paste
  • 2 Cups BLack Beans Cooked Omit to make this recipe Whole30 compliant
  • 2 Red or Green Bell Peppers Chopped
  • 1 Large Sweet or Yellow Onion Chopped
  • 1/4 tsp Ground Cayenne Pepper
  • 2 TBSP Dried Basil
  • 1 TBSP Dried Oregano
  • 1 tsp Dried Thyme
  • 1 tsp Smoked Paprika Chipotle Powder will also work, but will make the dish more spicy
  • 4 Cloves of Garlic Minced

Instructions
 

  • If you don't have chicken tenders, breasts will work just as well. I would cut them in strips before placing in the crockpot. Most of the sausage I buy comes in a large roll, so I cut the thawed meat into small round pieces, it usually stays together while cooking in the crockpot.
  • Place all ingredients in a crockpot & stir. Place heat on low & cook for 6-8 hours. I usually put everything in a crockpot around 9 or 10am & let it cook on low till 6pm & have found that it does not overcook any of the food. You may also cook it for 4-5 hours on high heat.
  • I usually serve this crockpot dish with cauliflower rice verses basmati rice to keep it a low carb and/or whole30 compliant.
  • If you don’t want this dish to be as spicy, leave out the cayenne pepper & use italian sausage instead of the spicy sausage.
