Valentine’s Day Sugar Cookies With White Chocolate Buttercream Frosting!

Recipe From Elana’s Pantry, Paleo Sugar Cookies

Elana Amsterdam’s website “Elana’s Pantry” is full of healthy, easy, grain free recipes. I’ve looked at her dessert recipes many times & they always looked so delicious and easy to make. Elana Amsterdam has her own amazing health story and I encourage you to read it on her website elanaspantry.com. According to her website she was diagnosed with multiple sclerosis and celiac’s disease several years ago, started a health & wellness website/blog in 2006 and like myself uses food as medicine. Reading people’s struggles with there health, but being able to maintain a much better quality of life by eating only whole foods, eliminating most or all dairy, grains and sugar is always uplifting and encouraging to me. I appreciate people like Elana that share there health stories because I believe it provides hope to there audience members.

Now to the fun part, Paleo Sugar Cookies. I’ve been wanting to make a dessert for Valentine’s Day that wouldn’t be loaded with sugar and at the same time be filled with at least some nutrition. I follow her on Instagram and saw the link for this sugar cookie recipe over the weekend. On Sunday I made the paleo sugar cookies and they were a hit with both my husband and I even minus the icing. This paleo sugar cookie recipe definitely meets all my requirements of a healthy dessert. They’re are not loaded with sugar, which meant that it didn’t leave us feeling bloated, stuffed and minus the sugar slump most desserts cause. Most important they have amazing flavor and texture and are delicious with a warm cup of coffee or your favorite cup of tea.

I didn’t completely follow her directions when I made the icing. For me it was easier using a double broiler to melt all the ingredients together just to ensure that I didn’t get the temperature to hot. I will have both methods explained in the instructions.

Valentine's Day Sugar Cookies With White Chocolate Buttercream Frosting!

Ingredients
  

  • INGREDIENTS FOR COOKIES
  • 3 Cups Blanched Almond Flour (not almond meal)
  • 1/2 tsp Celtic sea salt I used pink himalayan pink sea salt
  • 1/4 tsp Baking soda
  • 1 Pinch Ground Nutmeg I used 1/4 tsp because I like strong spice flavors
  • 1/2 Cup Coconut Oil, melted
  • 1/4 Cup Honey
  • 1 TBSP Orange zest
  • INGREDIENTS FOR WHITE CHOCOLATE BUTTERCREAM FROSTING
  • 1/2 Cup Organic Cane Sugar, ground into powdered sugar in a vitamix If you already have powdered sugar use 1 Cup
  • 6 TBSP Butter Room temperature cut into 6 small pieces
  • 1 OZ Cacao Butter
  • 1/4 tsp Natural Food Coloring Or more per your preference

Instructions
 

  • INSTRUCTIONS FOR THE COOKIES:
  • In a medium bowl mix dry ingredients together: almond four, salt, baking soda, & nutmeg.
  • In a small bowl mix melted coconut oil, honey and orange zest.
  • Mix wet ingredients with dry ingredients.
  • It's easiest to divide the dough evenly between two balls, place each piece onto parchment paper & cover with second piece of parchment paper. I used my rolling pin to roll out the dough. The original recipe states to roll dough out to thickness of 1/4th inch, but I like my cookie a little thicker therefore mine was closer to 1/2 inch thick. Place cookie dough in the freezer for 30 minutes.
  • If it's Valentine's Day, use heart shaped cookie cutters to cut out cookies. unfortunately I only had round cookie cutters, but using pink food coloring and sprinkles made it the cookies a very nice valentine's day treat.
  • Preheat oven to 350 degrees and bake for for 5-7 minutes. Each oven temperature might be slightly different. I needed to bake mine the full 7 minutes, than I allowed it to cool off on the pan for another couple minutes before removing.
  • For the frosting: I used the same ingredients that Elana had listed but I didn't completely follow her instructions.
  • I used a small sized double broiler, it just felt easier to me & less chance that I burn my ingredients. Once the water on the bottom broiler was boiling, I added the powdered sugar and 2 TBSP water to the top pan, stir until melted.Next add the cacao butter and butter, stir until both are melted. Last I stirred in food coloring.
  • Place the pan of icing in refrigerator and allow to cool until it's solid. Using a hand blender, blend until smooth.
  • Once the cookies are completely cooled, you may frost and decorate them.

Notes

  1. You can find good quality cacao butter at whole foods or amazon
  2. I use the food coloring and sprinkles from the brand, COLOR KITCHEN that I found it on amazon. I like this brand because the colors all come from fruit and vegetable pigments and it doesn't have any added preservatives.
