Throw it all in a blender, PULSE a few times & it’s ready to SERVE!

Fresh Spicy Salsa
Ingredients
- 2 Cups Diced Tomatoes, In the summer using your own tomatoes adds another level of deliciousness!
- 1 Handful Cilantro Leaves & small stems
- 1 Jalapeno Deseed for less spiciness
- 1 Small Red Onion Chopped Roughly.
- 3 Garlic cloves Minced
- Lime Juice of 1/2 Lime
- Salt & Black pepper to taste I use Pink Sea salt & only a quarter teaspoon
Instructions
- Not a lot of instructions are needed for this recipe, so simple but delicious. I usually dice my jalapeno to make sure that all the pieces are pretty small. Throw the rest of the ingredients in a blender & pulse 3-5x. I like to have pretty big pieces of onion & fresh cilantro in my salsa so only pulse it 2-3 times.
- If you have time to make the salsa ahead of time, refrigerate it for a couple hours to allow all the flavors soak in.
- Salsa is delicious & healthy but eating a bunch of chips with it most likely isn't. I like to serve salsa with an omelette or make my own chips using a combination of sweet potatoes, white potatoes and Japanese potatoes. Thinly sliced beets also make good homemade chips.
