Veggie Filled Meatloaf
I have always loved meatloaf, it’s one of those classic comfort food dishes that never gets old. Traditionally we served meatloaf with side dishes such as mashed potatoes, corn and green beans. These days I like to serve it with a simple fresh salad and baked potatoes.
For this recipe I always add a small diced onion and than I usually add two more veggies such as a red or green pepper, small zucchini and a small carrot. The last time when I made this recipe, I only had carrots in my fridge and the end result was still delicious. I still had fun experimenting with this recipe even though we are in the dead of summer because I have a lots of fresh options for this veggie filled meatloaf. After it’s done cooking I put one cup of my own homemade barbecue sauce on top and cook an additional five minutes. A delish substitute is ketchup or one of your favorite barbecue sauces.

Veggie Filled Meatloaf
Ingredients
- 1 LB Ground Beef
- 1 Small Carrot or a small zucchini
- 1 Small onion Diced
- 1 Small Red Pepper Diced
- 1 TBSP Horseradish Shredded
- 1/4 Cup Cassava Flour 1/2 Cup almond flour in place of cassava flour & Tapioca Starch also works well
- 2 TBSP Tapioca Starch
- 1 tsp Yellow mustard
- 3/4 tsp Salt
- 1/2 tsp Black pepper
- 2 Eggs beaten
- 1 Cup Barbeque Sauce Or Ketchup
Instructions
- Preheat oven to 400 degrees.
- To save a lot of time cut the veggies into small pieces and place into the food processor.
- Pulse it a few times, I like to have my veggies diced into very small pieces.
- Place the diced veggies in a medium size bowl and mix with the horseradish, cassava flour, tapioca starch, yellow mustard, salt, and black pepper.
- Beat eggs and mix with the veggie mixture.
- Lastly add beef and mix. Place meatloaf in an 8 inch greased bread pan or 3 miniature bread pans.
- Bake meatloaf at 400 degrees for 40 minutes or until internal temperature is 165 degrees.
- Evenly pour approximately 1 cup of your favorite barbecue sauce or ketchup onto the meatloaf and bake for another five minutes.
