Ham & Sweet Potato Frittata

Easy one dish weeknight meal!

I usually try to make omelets that turns into scrambled eggs with meat and veggies, still delicious but not very pretty. I decided to try and make something fancier, a simple frittata. It’s an easy one dish weeknight meal that the whole family should enjoy. There are a many many versions of this recipes on pinterest and all over the internet, which makes it fun because you can make it frequently but have different flavor profiles.

I had a lot of cooked ham leftover from a ham hock I made last week and I wanted to make it for dinner but it had to feel like it wasn’t just leftovers. I thought about making a savory tart, but I wanted to keep it more simple and less carb heavy. Than I thought of a frittata, which turned into the perfect solution. A lot of frittatas have heavy cream and cheese, but like most dishes you don’t miss the cheese as long as the dish is full of delicious flavors. This particular time I kept it simple, onions, sweet potatoes and ham but in the future I may add some fresh herbs like thyme and rosemary. This is a big recipe and it provided 2 meals for us.

Ham & Sweet Potato Frittata

Ingredients
  

  • 1 Small sweet or yellow onion Diced
  • 1 Medium Sweet Potato Chopped
  • 1 Cup Shredded Ham
  • 8 Eggs
  • 1/4 Cup Coconut or Almond Milk
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp garlic powder

Instructions
 

  • Preheat oven to 400 degrees.
  • Best pan to use for this recipe is a cast iron pan & it's the only pan you will need to make this dish!
  • Drizzle pan with olive or avocado oil. Dice onions and sweet potatoes, add to pan. Saute the veggies till potatoes and onions are softened. I cooked veggies on low heat and placed lid on pan.
  • While veggies are cooking, beat the eggs, add 1/4 cup milk, salt, black pepper and garlic powder, mix well.
  • Once veggies are softened, add 1 cup shredded ham and egg mixture. Make sure that the veggies and eggs are spread evenly in the pan, so that it bakes evenly.
  • Cook for about 2 minutes stove top. Than finish baking it in the oven, bake until the eggs are set which usually takes about 5 minutes.
