White Chicken Chili

A Creamy Dairy Free White Chili!

My favorite way to make this soup is by roasting a chicken, have some of it for dinner that same day. I use the bones to make broth and use the leftover meat along with the broth for a delicious pot of soup. If I don’t have enough meat to make a big pot of soup, I just add some cooked chicken breasts. Usually I have enough soup for two meals for my husband & I.

Most white chicken chilis call for green chilis from a jar, but as per usual I like to do things a little different. Fresh peppers have more flavor, hence the reason I choose them. I like my chili soups moderately spicy therefore I chose a combination of banana and anaheim peppers. Of course green chilis will also work, it just won’t quite have the same flavor but should still taste delicious. If you like a really spicy soup sub the anaheim peppers for jalapeƱo peppers.

Ingredients
  

  • 1 Medium Yellow or sweet onion Chopped
  • 4 Jalapeno Peppers Chopped & deseeded for less spiciness.
  • 1 Bell Pepper Diced
  • 4 Cloves of Garlic MInced
  • 1 Cup White Navy Beans
  • 5 Cups Chicken Broth
  • 4 Cups Shredded Chicken
  • 2.5 tsp Ground Cumin
  • 1/4 tsp Ground Cloves
  • 1 Spring Fresh Oregano or 1 TBSP Dried Oregano
  • 1 Cup coconut milk or milk of choice, optional Adding milk makes it more creamy

Instructions
 

  • Saute onions and peppers in olive oil or butter till softened, add minced garlic & saute for another two minutes.
  • Shred the chicken and add to soup pot.
  • Add the rest of the ingredients accept for coconut milk. Simmer on low heat for at least 15 minutes preferably for 30 minutes. Lastly add coconut milk, heat soup till hot but one doesn't need to simmer the soup again. Taste & add more salt & black pepper if needed.
  • Tastes great alone or add some of my favorite garnishes: Rosemary's gluten free crackers, avocado, cheddar cheese and cilantro.
