PORK MEATBALLS WITH CURRY POWDER

SERVED BEST WITH SPICY CILANTRO PESTO OR PORK GRAVY.

This is one of my simple recipes that I made by accident for an easy weeknight meal. It has become one of our most favorite comfort food but still incredibly healthy recipes that I’ve made this Fall Season. So far I’ve served it one of two ways, dipped in my recipe for spicy cilantro pesto and/or gravy made from the brown bits of the pan. If you make meatballs or sear any red meats or pork in a pan always deglaze the pan with water and/or white wine and make a gravy with it. Making a gravy this way will definitely impress your friends and family.

These pork meatballs are pretty simple to prepare, a few spices mixed in with gluten free breadcrumbs or crackers and an egg to hold the meatballs together. These meatballs served alongside a simple green salad or your favorite roasted veggies makes a well rounded delicious weeknight meal. Double the recipe and use leftovers for work lunches!

PORK MEATBALLS WITH CURRY POWDER

Ingredients
  

  • 1 LBS Ground Pork Without any spices
  • 1/2 Cup Plus 1 TBSP Gluten Free Bread Crumbs
  • 1.5 tsp Curry Powder, Yellow
  • 1/4 tsp Salt & Black Pepper
  • 1/4 Cup Nut Milk My favorite to use is coconut milk
  • INGREDIENTS FOR THE GRAVY
  • 1 3/4 Cups Water, Divided
  • 2 TBSP Arrowroot Powder
  • Salt & Black Pepper To Taste

Instructions
 

  • In a small bowl combine the bread crumbs with the curry powder, and 1/4 tsp each of salt & black pepper. Then mix in the coconut milk.
  • Mix milk mixture with the ground pork. Divide into 8 medium sized meatballs and place into a frying pan. I always place a piece of parchment paper onto the counter next to the stove, make my meatballs and place it on the parchment paper, it just helps to make sure the size of the meatballs are approximately the same size so they cook evenly. One pound of meat makes 8 medium sized meatballs.
  • Place pan on low to medium heat, place meatballs in pan and cook until the meatballs are at least 165 degrees internally, I always use a meat thermometer to check the temperature.
  • Once the meatballs are cooked through, place into a warmed bowl to keep the meatballs hot while making the pork gravy.
  • To make the gravy, deglaze the pan with 1.5 Cups of water, scrap off the brown bit scraps at the bottom of the pan and bring to a slow simmer.
  • To thicken the gravy, mix 1/4 cup warm water with 2 TBSP arrowroot powder. Than add to the water in the frying pan, stir until sauce thickens. Lastly add salt and black pepper to taste.
  • For a party you could have both the gravy and spicy cilantro pesto as dipping options.
