Italian Style Marinade

A long time ago when my cardiologist told me that I should follow a low sodium diet, I gave up fast food and eating out accept for my weekly lunch at Panera Bread. I also gave up salad dressings because most of them had large amount of sodium and added sugars, yuckity yuck. Several years ago, actually exactly 10 years ago I hosted my first family Thanksgiving and made homemade salad dressing for the first time. It was so easy and simple but yet tasted delicious and to this day I still use this salad dressing recipe. But over the years I have either developed or found other recipes that I also really like.

Recently I got an Italian Style salad dressing/marinade at a local grocery store, Georgetown Market and it was really delicious. Of course I decided to make it since I could make it at half the cost. It is packed with flavor and I’ve found that I like to serve it with a pretty simple salad, leafy greens with some onions. This dressing is pretty tart so you could add some sweet sliced apples to balance out the tartness. I also used it as a marinade for chicken breasts. Then I baked the chicken breasts covered in the marinade and served it over cauliflower rice, further instructions in the recipe instructions. This dish turned out to be one of my favorite new and easy weeknight meals.

As I’m writing this blog it’s only a week before Christmas Eve which is the reason why all my background decor is Christmasy. Also its snowy and cold outside and we needed a delicious filling but healthy new meal to distract us from the cold weather. Italian Style Marinade & Salad Dressing

Servings 8 OZ

Ingredients
  

  • 1/4 Cup olive oil
  • 1/4 Cup Water
  • 2 TBSP Apple cider vinegar
  • 1.5 tsp freshly squeezed lemon juice
  • 1 TBSP Coconut Sugar
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Dried Rosemary
  • 1/2 tsp Dried Parsley
  • 1/2 tsp Dried Sage
  • 1 tsp Hemp Seeds
  • 2 OZ Sun Dried Tomatoes
  • 1 Oz Red Pepper
  • 2 Garlic cloves
  • 1/4 tsp Onion Powder or Granules
  • 1/8 tsp Salt & Black Pepper

Instructions
 

  • Not a lot of instructions necessary for this salad dressing recipe. Simply throw all ingredients into a vitamix and blend until desired consistency. I like to blend it until all ingredients are very fine but not completely puree.
  • Since this dressing already has a lot of flavor, I like to use it on a simple salad comprised of greens and small amount of red onions.
  • It is also delicious to use as a marinade for chicken breasts. Place chicken breasts in a tightly sealed container and cover with the marinade. Refrigerate overnight or for at least 8 hours before cooking the chicken. I baked the chicken at 350 degrees covered with the marinade in a small baking pan and served over cauliflower rice for a very delish and easy weeknight meal.
