Turkey Hummus Burgers With Mint Cucumber Salad

Years ago I made a turkey hummus burger recipe that I found in a food magazine and it became a favorite over the years. I hadn’t made this recipe since moving to Kentucky so recently I decided to make my own version. I make everything from scratch including the hummus, which is important because most store bought versions have unnecessary ingredients such as seed oils, preservatives and added sweeteners. When I make hummus I usually double or triple the recipe and freeze what I don’t immediately use. The original recipe was more complicated and I tried to simplify my version. Of course it always takes more time to make things from scratch such as the garlic roasted hummus but if you double the recipe it makes for an easy meal in the future.

The mint cucumber side salad makes this burger, the refreshing flavors of mint and cucumber help cool down the hot summer days. Feta cheese would be a good addition to this salad if one tolerates dairy well. As always if one makes this recipe, let me know your thoughts. Turkey Hummus Burgers with Mint Cucumber Salad

Servings 8 Slider size burgers

Ingredients
  

Mint Cucumber Salad

  • 1 Cucumber Diced
  • 2 TBSP Balsamic Vinegar
  • 2 TBSP Fresh Mint
  • 4 TBSP Olive Oil
  • Salt & Black Pepper to taste

Turkey Burgers

  • 1 lb Ground Turkey
  • 1 Cup Garlic Roasted Hummus, divided Recipe for this hummus is on my blog
  • 1/4 Cup Parsley or 2 TBSP dried Parsley
  • 3/4 tsp Coriander
  • 1/2 tsp Salt
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Cayenne Pepper
  • 1 Butternut Squash 3/8 Inch Slices

Instructions
 

Cucumber salad

  • Dice cucumber & place in medium sized bowl. Add the rest of the ingredients and mix.
  • Seal bowl with airtight lid or saran wrap and place in refrigerator. This will allow time for all the flavors to soak and marinade together while one is making the burgers and roasting the butternut squash.

Butternut Squash

  • Preheat oven to 400 degrees.
  • Slice 8 pieces of Butternut squash about 3/8th inch thick, peel off the skin. Lather a cast iron pan or dutch oven with coconut oil and place squash slices in a single layer. Brush tops of the squash with coconut oil & sprinkle with salt.
  • Roast squash for 20 minutes or till bottom is medium brown, flip over and place back in oven till squash pierces easily with a fork. Total roasting time is approximately 40 minutes.
  • While the squash is roasting, put the burgers together.

Turkey Hummus Burgers

  • In a medium Bowl mix the hummus with parsley and all the spices. Then mix it with the ground turkey. Divide the meat into 8 equal patties.
  • I used a cast iron pan, place it on medium heat and add 1 TBSP oil such as butter or coconut oil. Cook burgers approximately 5 minutes on each side or until cooked through. While burgers are cooking add more butter if needed. I use a cooking thermometer and make sure that the middle of the burgers reach 160 degrees.
  • Once the squash and burgers are ready, layer everything. First place a slice of squash onto the plate, then spread some hummus onto the squash, next add the burger and then a couple spoonful of mint cucumber salad. Serve & Enjoy!
