Spiced Apple Sauce Cake

It’s getting closer to the Fall Season here in central Indiana, by far my favorite season of the year for many reasons. All things Apples, Pumpkin Pie Spice, crisp cool air in the mornings perfect for walks and runs in the country and the ever changing colors of leaves from bright green to shades of red, orange and yellow. This cake is filled with smells and spices that are associated with the Fall Season; apples, allspice, cloves and cinnamon. As the cake is baking in the oven it is difficult to wait till it’s ready to sink your teeth into that first bite savoring these amazing flavors.

Baking with gluten free ingredients has been a learning experience for me, it definitely is not the same as baking with white or wheat flours. Before mixing the ingredients be sure to read all the hints because these really help to make the texture much more cake like in texture and also helps the cake batter to rise better.

There’s a family story behind this cake & maybe I will share it in the future but for now I hope you can taste and smell all things fall when you make this cake for the first time. CHEERS TO A HAPPY & HEALTHY DAY!

Spiced Apple Sauce Cake

Ingredients
  

  • 1/2 Cup Coconut Sugar
  • 2 Eggs
  • 1/2 Cup Coconut oil Melted
  • 1 Cup Unsweetened Applesauce
  • 1 Cup FIne Grinded Almond Flour
  • 1/2 Cup Tapioca Starch
  • 1/4 Cup Coconut flour
  • 2 tsp Baking soda
  • 1.5 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Allspice
  • 1/2 tsp Cloves
  • 1/2 Cup Raisins Unsweetened
  • 1/4 Cup Pecans

Instructions
 

  • Preheat oven to 325 degrees.
  • In a medium bowl mix coconut sugar & eggs with a whisk or hand mixer. Than add applesauce, mix well. Last mix in the melted coconut oil.
  • In another mixing bowl, mix the rest of the dry ingredients accept raisins and pecans. Sift the the dry ingredients into wet ingredients. Sifting helps to mix the dry and wet ingredients more thoroughly. Fold in pecan pieces and raisins.
  • Using cooking spray to grease an 8x8 or 8x4 baking pan. Spread cake batter evenly into the pan. Bake for 50 minutes or until toothpick inserted in the middle comes out clean.
  • Allow cake to cool, than sift with powdered sugar onto the cake if desired.
