Homemade Beef Chorizo
Over the years I bought beef chorizo from a local farmer, but once we moved to Kentucky I no longer had a place to buy it locally. I started researching recipes and it seemed very simple to make my own version. So that’s what I did. There’s more than one way to make chorizo, but I choose to use the spices that were already on my spice rack. I already have several recipes using beef chorizo, Chorizo egg muffins, Black bean & chorizo baked sweet potatoes, & Butternut squash pizzetta which is simply sliced & roasted butternut squash layered with pizza or spaghetti sauce, chorizo and cheese and baked again till cheese is melted. This makes a really easy weeknight meal or appetizer. I’ve also made this chorizo into patties and used it to make a breakfast egg & cheese sandwiches. One could double and triple the recipe, freeze whatever isn’t used on that same day & have it on hand for future meals.
This is an easy & simple recipe to make and it was something that I truly missed, but I was so happy to quickly learn how to make it myself. Roasted Squash Chorizo Pizzatte
Baked Sweet Potatoes with Chorizo & Black Beans
Beef Chorizo
Ingredients
- 2 LBS Ground Beef
- 3 TBSP Smoked Paprika
- 3 TBSP Chili Powder
- 1.5 TBSP Garlic Granules
- 2 tsp Cayenne Pepper
- 1.5 tsp Cumin
- 1.5 tsp Coriander
- 2 tsp Oregano dried
- 2 tsp Salt
- 1 tsp Black Pepper
- 1/4 tsp Ground Cinnamon
- 1/4 tsp Ground Cloves
- 2.5 TBSP Apple Cider Vinegar
Instructions
- Mix all spices and apple cider vinegar, then mix with ground beef. Double or triple the recipe and freeze to use later for your favorite meals.
- To cook, heat a skillet over medium heat and add the chorizo. Use a spatula to cut it into small pieces as it's cooking, takes about 6-8 minutes for the meat to cook completely through. One can also make the uncooked chorizo into patties and then cook like a burger and use for breakfast sandwiches.
